This coffee is just downright classic washed Ethiopian Yirgacheffe all over. 

Everyone knows we absolutely love our Ethiopians at H&G. When new crop samples land we sack off all the boring roastery admin and other silly jobs we don't like doing and make excuses to just cup lots of new exciting coffees from the home of coffee.

This little number follows a pretty classic Ethiopian washed Yirgacheffe profile as we said. That's not saying it's boring or predictable and tastes like every other coffee. Oh no, no, no, no. This coffee is uber complex and has many layers to it.

Up front the acidity is zesty lemon zest, not sour lemon juice but sweet zest. The aromatics on this one are insane and we had to plump for the over riding characteristic that we all felt this coffee had in abundance. Tasting notes were being thrown around with gusto. "It's got a bit of rose in it", "It's jasminey", "coriander, seed not leaf", "bergamot! bergamot! bergamot!". These are all true, the aromatics for this one change and evolve over time, coming to the fore then sneaking back to reveal another layer of something delicious. The one thing we all agreed on was light floral honey, giving a sweetness and beautifully elegant floral edge to the finish. Fruit wise this has a gorgeous and lush peach iced tea taste to it, making it mega refreshing and utterly wonderful.
